- 1 large ripe avocado
- ½ cup frozen or canned corn
- ¼ cup finely chopped red onion
- ¼ cup fresh cilantro
- 1 tablespoon lime juice
- ½ teaspoon cumin powder
- ¼ teaspoon chili powder
- Salt and black pepper to taste
- 4 large (10-inch) flour tortillas
Instructions
- In a mixing bowl, mash the ripe avocado with a fork until desired consistency.
- Mix in lime juice to keep the avocado fresh.
- Add rinsed black beans, thawed/drained corn, red onion, cilantro, cumin powder, chili powder, salt, and pepper. Fold gently without over-mixing.
- Warm tortillas in a skillet or microwave for flexibility.
- Place one tortilla on a flat surface; spoon in one-quarter of the filling.
- Roll up snugly and repeat with remaining tortillas and filling.
- Serve immediately while warm.
