- 2 medium zucchini
- 1 large egg
- 1 Tbsp milk (oat, cashew, or soy)
- ½ cup Italian seasoned breadcrumbs
- ⅓ cup grated Parmesan cheese
- ½ – ¾ tsp salt (to taste)
- ¼ tsp black pepper
- Non-stick cooking spray
Instructions
- Slice zucchini into uniform ¼-inch rounds.
- In one shallow bowl, whisk together egg and milk; in another bowl, mix breadcrumbs, Parmesan, salt, and pepper.
- Coat each zucchini slice in the egg wash then press into the breadcrumb mixture until well-coated.
- Place half the coated slices in the air fryer basket and spray lightly with cooking spray.
- Air fry at 400°F for 8-10 minutes, flipping halfway through for even crispiness.
- Repeat with remaining slices and serve with your choice of dipping sauces.
