Ingredients
- 3 small/medium zucchinis
- 2 tablespoons avocado oil or olive oil
- 2 ½ tablespoons panko or bread crumbs
- 3 tablespoons grated parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon ground pepper
Instructions
- Preheat the air fryer to 400°F (200°C) for about 2-3 minutes.
- Slice zucchinis into uniform ¾” chunks.
- In a mixing bowl, toss zucchini with avocado or olive oil until evenly coated.
- In a small bowl, mix together panko, parmesan cheese, garlic powder, paprika, salt, and pepper.
- Sprinkle seasoning mixture over zucchini and toss gently to coat well.
- Place seasoned zucchini in the air fryer basket in a single layer.
- Cook for approximately 5 minutes; shake the basket and continue cooking for an additional 2-4 minutes until crispy and golden.
