- For the streusel: ½ cup all-purpose flour, ¼ cup packed light brown sugar, ¼ cup granulated sugar, ¼ teaspoon ground cinnamon, ¼ cup cold unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin.
- In a large bowl, whisk together the dry ingredients: flour, baking soda, baking powder, spices, and salt.
- In another bowl, mix the wet ingredients: pumpkin puree, sugars, vegetable oil, eggs, and vanilla until smooth.
- Combine the wet and dry mixtures until just combined; avoid overmixing.
- For the streusel: mix flour, sugars, and cinnamon; blend in cold butter until crumbly.
- Fill muffin cups with batter and top with streusel.
- Bake for 18-22 minutes or until a skewer comes out clean. Cool before serving.
