Ingredients
- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–½ teaspoons baking powder
- ½ teaspoon baking soda
- 1–½ teaspoons ground cinnamon
- Pinch allspice
- 1/4 teaspoon coarse kosher salt
- 1–¾ cups all-purpose flour
- 1 tablespoon butter at cool room temperature
- ¼ cup granulated sugar for topping
- 1 teaspoon ground cinnamon for topping
Instructions
- Preheat your oven to 350°F and prepare a 9” square baking dish with butter and parchment paper.
- In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes) and whisk in cold butter until melted.
- In a medium bowl, mix eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, and salt.
- Gradually add the reduced apple cider to the wet mixture and stir until well combined.
- Gently fold in the flour until just incorporated.
- Pour the batter into your prepared baking dish and bake for about 22-25 minutes or until golden brown.
- Allow cooling slightly before topping with melted butter and sprinkling with cinnamon sugar.
