  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter at cool room temperature
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish with butter and parchment paper.
  2. In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes) and whisk in cold butter until melted.
  3. In a medium bowl, mix eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the reduced apple cider to the wet mixture and stir until well combined.
  5. Gently fold in the flour until just incorporated.
  6. Pour the batter into your prepared baking dish and bake for about 22-25 minutes or until golden brown.
  7. Allow cooling slightly before topping with melted butter and sprinkling with cinnamon sugar.
