- 3 medium zucchinis (sliced into fries)
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (panko preferred for extra crispiness)
- 2 large eggs (beaten)
- Garlic powder (to taste)
- Italian seasoning (to taste)
- Paprika (optional, to taste)
- Salt (to taste)
- Black pepper (to taste)
- Cooking spray or olive oil spray
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a shallow bowl, mix Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper.
- In another bowl, beat the eggs. Dip each zucchini fry into the eggs and then coat in the breadcrumb mixture.
- Arrange coated fries in a single layer on the baking sheet and lightly spray with cooking spray.
- Bake for 20-25 minutes until golden brown and crispy, flipping halfway through.
- Serve immediately with your choice of dipping sauce.
