Ingredients
- 6 cups fresh spinach leaves
- 1 cup fresh strawberries (sliced)
- 1 cup fresh blueberries
- 1/2 cup crumbled feta cheese
- 1/2 cup toasted pecans
- 1/4 cup red onion (thinly sliced)
- 1/2 cup balsamic vinegar (for glaze)
- 2 tbsp honey (optional)
Instructions
- In a large mixing bowl, combine spinach leaves, sliced strawberries, blueberries, red onion, and toasted pecans. Toss gently.
- Sprinkle crumbled feta cheese on top.
- In a small saucepan over medium heat, simmer balsamic vinegar until reduced by half and thickened slightly. Optionally stir in honey for sweetness.
- Allow the glaze to cool slightly before drizzling over the salad just before serving. Toss gently to coat.
