- 1 lemon (zested)
- 1 egg (separated)
- 2 1/2 cups powdered sugar
- 1/4 cup lemon juice
Instructions
- Preheat the oven to 425°F.
- Prepare the filling by mixing blueberry pie filling with lemon zest in a bowl.
- Roll out the pie crusts and cut out circles using a biscuit cutter.
- Place filling in the center of each circle, brush edges with egg yolk, fold, and seal tightly.
- Brush tops with egg white and bake on a parchment-lined baking sheet for about 15 minutes until golden brown.
- Whisk together powdered sugar and lemon juice for glaze; coat baked pies while warm.
