Ingredients

  • 4 cups Rice Krispies cereal
  • 3 cups mini vegan marshmallows
  • 2 tablespoons unsalted butter
  • 1 cup fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a large pot, melt the butter over low heat. Add mini vegan marshmallows and stir until completely melted and smooth.
  2. Remove from heat and gently fold in the Rice Krispies until well coated.
  3. Fold in the fresh blueberries evenly.
  4. Press the mixture into a greased 9×9-inch baking pan using a spatula or your hands.
  5. In a mixing bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  6. Drizzle the glaze over the top of the mixture.
  7. Allow to cool at room temperature for about 30 minutes until firm, then cut into squares.
