- 1 teaspoon kosher salt
- 5 Tablespoons unsalted butter (softened)
- 3/4 cup light brown sugar (packed)
- 1 teaspoon cinnamon
- 2 Tablespoon cake flour
- 1 cup powdered sugar
- 1/2 teaspoon cinnamon
- 3 Tablespoons unsalted butter (melted and cooled)
- 2 1/2 Tablespoon milk
Instructions
- In a mixing bowl, cream together unsalted butter, granulated sugar, and light brown sugar until fluffy. Beat in eggs and vanilla.
- In a separate bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt. Gradually mix into the wet ingredients until combined.
- Chill dough for 1 hour.
- Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
- Prepare filling by mixing softened butter, brown sugar, cinnamon, and cake flour until smooth.
- Form the cookies by placing filling in the center of dough pieces and sealing them closed before shaping into balls.
- Bake for 11–13 minutes or until edges are golden.
