- 2 large cooked and shredded chicken breasts
- ½ cup buffalo sauce (like Frank's RedHot)
- 2 tablespoons butter
- ½ tablespoon olive oil
- Fresh celery, sliced
- Lettuce leaves (romaine or iceberg)
- Ranch dressing
- Optional: blue cheese crumbles
Instructions
- In a large pan over medium/high heat, cook and shred the chicken until fully cooked, adding water as needed.
- Reduce heat to medium/low; stir in butter and olive oil until melted. Add buffalo sauce and celery seed, season with pepper, then mix in sliced celery before removing from heat.
- Scoop the chicken mixture into each lettuce leaf and top with ranch dressing and blue cheese if desired. Serve warm.
