- 2 1/2 cups sugar
- 3/4 cup butter (salted)
- 3/4 cup heavy cream
- 11 ounces butterscotch chips
- 7 ounces vegan marshmallows crème
- 1 tsp vanilla extract (alcohol-free)
- 1 1/4 cups sugar
- 6 Tbsp butter
- 6 Tbsp heavy cream
- 1 cup white chocolate chips
- 1/2 cup vegan marshmallows crème
- 1/2 tsp vanilla extract
Instructions
- For the Butterscotch Layer: In a saucepan, combine sugar, butter, and heavy cream. Cook over medium heat until melted, then boil for 5 minutes while stirring constantly. Remove from heat and mix in butterscotch chips until smooth. Stir in vegan marshmallow crème and vanilla extract. Pour into a parchment-lined 8×8 inch pan and freeze.
- For the White Chocolate Layer: In another saucepan, repeat the above steps with sugar, butter, and heavy cream until melted; boil for 5 minutes. Add white chocolate chips, vegan marshmallow crème, and vanilla extract; mix well and pour over the set butterscotch layer.
- Chill in the refrigerator for 2-3 hours until firm before cutting into squares.
