Ingredients
- 12 oz penne or rotini pasta
- 2 chicken breasts, cubed
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta according to package instructions; drain and set aside.
- In a large skillet over medium heat, heat olive oil and cook chicken with Cajun seasoning until browned (5–7 minutes). Remove and set aside.
- In the same skillet, sauté diced onion, red bell pepper, and minced garlic until softened (3–4 minutes).
- Add cream cheese to the skillet; stir until melted.
- Pour in heavy cream and chicken broth; mix well. Add cheeses, paprika, salt, and pepper until creamy.
- Combine cooked chicken and drained pasta into the sauce; stir thoroughly.
- Transfer mixture to a greased baking dish and bake for 20–25 minutes until golden brown on top.
