Ingredients
- 12 eggs
- 1 stalk of celery
- 1 green onion
- 4 tablespoons mayonnaise
- 2 tablespoons Creole mustard
- ¼ teaspoon Cajun seasoning
- 1 teaspoon hot sauce
Instructions
- Boil the eggs in cold water, bringing to a boil, then cover and remove from heat to sit for 11 minutes.
- Transfer eggs to an ice bath to cool, then peel and halve lengthwise.
- Mash yolks in a bowl; mix in minced celery, chopped green onion, mayonnaise, Creole mustard, Cajun seasoning, and hot sauce until smooth.
- Fill egg whites with the yolk mixture and garnish with extra green onions if desired.
