Ingredients
- 3–4 large carrots (about 2 cups of ribbons)
- 1 Tbsp ghee or butter
- 1/2 tsp fresh rosemary, minced
- 1/2 tsp fresh parsley, minced
- 1/4 tsp salt
Instructions
- Wash the carrots thoroughly. Using a vegetable peeler, create long ribbons by peeling along the length of each carrot. Rotate as needed until too thin to peel.
- Fill a saucepan with 1 inch of water and bring to a boil. Place the carrot ribbons in a steamer basket over the boiling water and steam for about 3 minutes until crisp-tender.
- In a small mixing bowl, combine ghee, rosemary, parsley, and salt. Toss the steamed carrot ribbons with this mixture until well-coated. Serve immediately while warm.
