Ingredients
- 2 slices of sourdough or artisan bread
- 1/2 ripe avocado, mashed
- 1 tbsp mayonnaise or aioli (optional)
- 1 tsp lemon juice
- 1/2 cup cooked shredded chicken (grilled or rotisserie)
- 2 slices of cheddar or Monterey Jack cheese
- 1 tbsp butter (for toasting)
- Salt and pepper to taste
- Sliced tomato
- Red onion
- Crispy Turkey Bacon
Instructions
- In a mixing bowl, mash the avocado with lemon juice, salt, and pepper until smooth.
- Spread mayonnaise on one side of each slice of bread if desired. On the other side of one slice, layer the avocado mixture followed by shredded chicken and cheese. Top with the second slice (mayo side out).
- Heat butter in a skillet over medium heat and grill the sandwich for 3-4 minutes per side until golden brown and cheese is melted.
- Slice in half and serve hot.
