Ingredients
- 1 small head garlic
- 1 cup chopped fresh cilantro
- 1 lime (juiced)
- 3 to 4 tablespoons extra virgin olive oil
- 2 tablespoons harissa or chili paste
- 1 1/2 pounds large peeled and deveined shrimp
- Kosher salt and black pepper
Instructions
- Preheat oven to 400°F for roasting garlic.
- Trim the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about 10 minutes until tender.
- Once cooled, peel and finely chop the roasted garlic.
- In a bowl, mix roasted garlic with cilantro, lime juice, olive oil, and harissa until well combined.
- Heat a skillet over high heat; season shrimp with salt and pepper, then cook for about 2 minutes per side until pink.
- Toss cooked shrimp with the garlic sauce and serve hot.
