- 2 cups apple cider
- 2 cups diced apples
- 1/4 cup packed light brown sugar
- 1/2 cup unsalted brown butter
- 1 tbsp pure vanilla extract
- 1 1/2 cups cake flour
- 4 oz cream cheese (for frosting)
- Ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with cupcake liners.
- In a saucepan, cook diced apples with apple cider, brown sugar, and cinnamon until tender. Stir in apple cider reduction.
- In another bowl, whisk together cake flour, baking powder, cinnamon, nutmeg, and salt.
- Cream melted brown butter with sugars; add eggs one at a time followed by vanilla.
- Combine wet and dry ingredients; fold in the cooked apple mixture.
- Fill cupcake liners two-thirds full and bake for 20-25 minutes until a toothpick comes out clean.
- Cool completely before frosting with cream cheese mixture made from cream cheese, browned butter, powdered sugar, cinnamon, vanilla extract, and apple cider reduction.
