  • 2 cups diced apples
  • 1/4 cup packed light brown sugar
  • 1/2 cup unsalted brown butter
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour
  • 4 oz cream cheese (for frosting)
  • Ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cupcake liners.
  2. In a saucepan, cook diced apples with apple cider, brown sugar, and cinnamon until tender. Stir in apple cider reduction.
  3. In another bowl, whisk together cake flour, baking powder, cinnamon, nutmeg, and salt.
  4. Cream melted brown butter with sugars; add eggs one at a time followed by vanilla.
  5. Combine wet and dry ingredients; fold in the cooked apple mixture.
  6. Fill cupcake liners two-thirds full and bake for 20-25 minutes until a toothpick comes out clean.
  7. Cool completely before frosting with cream cheese mixture made from cream cheese, browned butter, powdered sugar, cinnamon, vanilla extract, and apple cider reduction.
