Ingredients
- 2 cups ricotta cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup mini chocolate chips
- 2 pre-made pie crusts
- 1 large egg (for egg wash)
- Sugar (for sprinkling)
- 1/4 cup chopped pistachios
- 3 maraschino cherries (for garnish)
- 1/4 cup extra chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, and optional cinnamon; whisk until smooth. Fold in mini chocolate chips.
- Place one pie crust in the bottom of a baking dish, spread the ricotta mixture over it, then cover with the second pie crust and seal the edges.
- Brush the top crust with beaten egg and sprinkle with sugar.
- Bake for about 35 minutes or until golden brown. Allow to cool completely before slicing and garnishing with pistachios, cherries, and extra chocolate chips.
