Ingredients

  • 1 cup chopped pecans or almonds
  • 1 cup granulated sugar
  • 1 cup butter
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 teaspoon vanilla
  • Chocolate chips for topping

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a heavy-bottomed saucepan, combine butter, sugar, water, and salt over medium heat. Stir until boiling.
  3. Attach a candy thermometer and continue cooking until the mixture reaches 300°F (hard crack stage).
  4. Remove from heat and quickly stir in vanilla and half of the chopped nuts.
  5. Pour the mixture onto the prepared baking sheet and spread evenly with a spatula. Sprinkle chocolate chips on top immediately.
  6. Once chocolate melts slightly, spread it over the toffee and add remaining nuts and optional sea salt.
  7. Let cool completely before breaking into pieces.
