Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in one bowl.
  3. In another bowl, cream softened butter and sugar until fluffy; add eggs one by one.
  4. Mix in vanilla and coconut extracts, then alternate adding dry ingredients with coconut milk until smooth.
  5. Pour batter into prepared pans and bake for 25–30 minutes until golden brown. Cool completely on a rack.
  6. For the frosting, beat cream cheese and powdered sugar until blended, then fold in whipped cream.
