- 1/2 cup all purpose flour
- 1/3 cup brown sugar, packed

- 5 Tbsp. softened unsalted butter
- 1 1/4 cup all purpose flour, spooned and leveled
- 3/4 cup cake flour, spooned and leveled
- 1 tsp. cornstarch
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 8 Tbsp. cold unsalted butter, cut into cubes
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 tsp. vanilla extract
- 1 large egg
- 1 large egg yolk
- 2 Tbsp. unsalted butter, melted
- 3 Tbsp. heavy cream or milk
- 1 cup powdered sugar, sifted
- 1 tsp. vanilla
- pinch salt
Instructions
- Prepare the streusel filling by combining flour, brown sugar, cinnamon, salt, and butter until clumpy. Refrigerate.
- Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
- In a bowl, mix both flours, cornstarch, cinnamon, baking soda, baking powder, and salt.
- Cream cold cubed butter with sugars in a stand mixer until smooth. Add egg, yolk, and vanilla; mix well.
- Gradually incorporate the dry ingredients into the butter mixture.
- Scoop dough onto prepared sheets and create indents for the streusel. Fill each indent with about 1 tablespoon of streusel.
- Bake for 8-11 minutes until edges are set. Cool slightly before drizzling with icing made from powdered sugar, vanilla, and salt.
