- 1/3 cup pistachios, chopped (unsalted)
- 2 tablespoons cornstarch (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract until well combined.
- In a separate bowl, whisk together flour, salt, and cornstarch before gradually adding to the butter mixture while mixing on low speed.
- Fold in chopped cranberries and pistachios until evenly distributed.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each slightly.
- Bake for 12 minutes or until edges are lightly golden. Cool on a wire rack before serving.
