  • 2 pounds zucchini (sliced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic (minced)
  • 2 tablespoons butter (cut into small cubes)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon fresh ground black pepper

Instructions

  1. Preheat oven to 425°F.
  2. Butter a baking dish and set aside.
  3. Slice zucchini, sprinkle with salt, and let rest for 15 minutes to draw out moisture.
  4. Pat dry the zucchini slices with paper towels.
  5. Arrange zucchini in the baking dish.
  6. In a bowl, mix heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the Parmesan cheese.
  7. Melt butter in a saucepan; sauté garlic until fragrant then add the cream mixture until bubbly.
  8. Stir in half of the mozzarella until melted.
  9. Pour sauce over zucchini; top with remaining cheeses.
  10. Bake for 18-22 minutes until golden brown.
