Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups canned crushed tomatoes
- 4 cups vegetable broth
- 1 cup tortellini (fresh or frozen)
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté chopped onion until translucent, about 5 minutes. Add minced garlic and cook for 1 minute.
- Pour in crushed tomatoes and vegetable broth; bring to a boil. Reduce heat and simmer for 10 minutes.
- Add tortellini and cook according to package instructions, usually 3-5 minutes.
- Stir in heavy cream; season with salt and pepper to taste.
- Serve hot, garnished with fresh basil leaves.
