Ingredients
- 1 medium zucchini
- 1/4 – 1/2 teaspoon kosher salt
- 2 tablespoons avocado oil
- 3 tablespoons grated parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
Instructions
- Preheat air fryer to 345°F.
- Use a mandolin slicer to cut zucchini into thin slices (about 1.55mm). Lay them on a paper towel-lined baking sheet and sprinkle with salt. Let sit for 10 minutes.
- Mix parmesan cheese, garlic powder, paprika, and Italian seasoning in a bowl.
- Pat zucchini dry to remove excess moisture. Toss slices in avocado oil and then coat with the seasoning mix.
- Place coated zucchini in a single layer in the air fryer basket and cook for 12-14 minutes until crispy.
