  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon sesame oil
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/4 teaspoon salt
  • 1 avocado, sliced

Instructions

  1. Press tofu to remove excess moisture, then cut into cubes.
  2. In a bowl, combine cornstarch, flour, garlic powder, salt, and pepper. Toss tofu cubes until evenly coated.
  3. Heat oil in a skillet over medium-high heat. Cook tofu until golden brown and crispy (about 8-10 minutes).
  4. In a small bowl, whisk soy sauce, rice vinegar, honey, minced garlic, and sesame oil to create the teriyaki sauce.
  5. Bring vegetable broth to a boil in a pot; add brown rice and salt. Reduce heat, cover, and simmer for 15-20 minutes or until tender.
  6. Layer cooked rice in a bowl, top with sliced avocado and crispy tofu cubes. Drizzle with teriyaki sauce before serving.
