- 16 ounces mini seedless cucumbers
- 1 cup shaved Parmesan cheese
- 4 ounces cooked and crumbled turkey bacon
- 1/2 tablespoon salted butter
- 1/4 teaspoon panko breadcrumbs
- 1/2 cup Caesar dressing (to taste)
Instructions
- In a small skillet, melt the butter over medium heat. Add panko breadcrumbs and toast until golden brown. Set aside.
- Slice the cucumbers into thin rounds (about 1/4 inch) and place them in a large bowl.
- Add shaved Parmesan, crumbled turkey bacon, toasted breadcrumbs, and Caesar dressing to the bowl. Toss until well combined.
- Garnish with additional Parmesan, turkey bacon, and breadcrumbs before serving.
