  • 6 tablespoons melted butter
  • 1/4 cup sugar
  • 1 teaspoon unflavored vegan gelatin
  • 2 tablespoons cold water
  • 4 ounces white chocolate chips
  • 2 1/2 tablespoons milk or cream
  • 1 cup heavy whipping cream
  • 34 drops pure peppermint oil
  • Dark chocolate for glaze

Instructions

  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press mixture into a tart pan and bake for 10 minutes. Let cool.
  2. Bloom vegan gelatin in cold water for about 5 minutes. Microwave until dissolved.
  3. Melt white chocolate and combine with heated milk. Mix in bloomed gelatin and peppermint oil and let cool.
  4. Whip heavy cream until medium-stiff peaks form. Fold whipped cream into the cooled chocolate mixture gently.
  5. Fill the cooled tart shell with mousse and refrigerate for several hours to set.
  6. Prepare glaze by heating heavy cream, mixing in dark chocolate until smooth, then drizzle over chilled tart.
