Ingredients
- 1 cup chocolate graham crackers (finely ground)
- 6 tablespoons melted butter
- 1/4 cup sugar
- 1 teaspoon unflavored vegan gelatin
- 2 tablespoons cold water
- 4 ounces white chocolate chips
- 2 1/2 tablespoons milk or cream
- 1 cup heavy whipping cream
- 3–4 drops pure peppermint oil
- Dark chocolate for glaze
Instructions
- Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press mixture into a tart pan and bake for 10 minutes. Let cool.
- Bloom vegan gelatin in cold water for about 5 minutes. Microwave until dissolved.
- Melt white chocolate and combine with heated milk. Mix in bloomed gelatin and peppermint oil and let cool.
- Whip heavy cream until medium-stiff peaks form. Fold whipped cream into the cooled chocolate mixture gently.
- Fill the cooled tart shell with mousse and refrigerate for several hours to set.
- Prepare glaze by heating heavy cream, mixing in dark chocolate until smooth, then drizzle over chilled tart.
