Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 pound spaghetti
- 4 tablespoons butter
- 4 cloves garlic
- 3 cups whole milk
- 1 cup chicken broth
- 8 ounces cream cheese
- 2 cups shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- Optional: Red pepper flakes for extra heat
Instructions
- Cook spaghetti according to package directions; drain and set aside.
- Season chicken with Cajun seasoning and paprika. In a skillet, heat olive oil and cook chicken until browned (6–8 minutes). Remove chicken.
- In the same skillet, melt butter, sauté garlic, then whisk in flour to create roux.
- Gradually add milk and broth while whisking until smooth; bring to simmer.
- Stir in cream cheese and 1 cup mozzarella until melted. Season as desired.
- Return chicken to the skillet; simmer briefly.
- Add spaghetti and toss to coat in sauce.
- Top with remaining mozzarella; cover until melted.
