- 6–8 ripe fresh peaches (peeled and sliced)
- 2 ½ Tbsp cornstarch
- 3/4 – 1 cup granulated sugar (adjust based on peach sweetness)
- 1 cup all-purpose flour
- 2 large egg yolks
- ¼ cup butter (melted)
- 1 tsp baking powder
- 2 large egg whites (beaten)
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and slice the peaches, then mix them with cornstarch and sugar in a bowl before placing the mixture in a greased 13×9-inch baking dish.
- In another bowl, whisk together the flour, egg yolks, melted butter, baking powder, and remaining sugar until smooth. Gently fold in the beaten egg whites until just combined.
- Spread the batter over the peach mixture in the baking dish. Bake for about 45 minutes or until golden brown and bubbly.
