  • 1 (9 inch) single crust homemade pie crust
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 (15oz) can pure pumpkin puree or 2 cups homemade pumpkin puree
  • 3/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roll out the pie crust and fit it into a 9-inch pie dish, trimming excess dough.
  3. In a mixing bowl, whisk together eggs, granulated sugar, brown sugar, pumpkin puree, heavy cream, vanilla extract, cinnamon, ginger, cloves, and salt until smooth.
  4. Pour the filling into the prepared crust.
  5. Bake for 15 minutes at 425°F (220°C), then reduce temperature to 350°F (175°C) and bake for another 45 minutes or until set.
  6. Let cool completely before serving.
