Instructions
- Preheat the oven to 350°F (175°C).
- Grease a round baking dish or pie dish.
- Place the tortilla at the bottom of the baking dish.
- Whisk together eggs, cottage cheese, salt, and pepper in a mixing bowl.
- Pour the egg mixture over the tortilla evenly.
- Add your desired toppings such as diced tomatoes and green peppers.
- Sprinkle mozzarella cheese on top.
- Bake for 20-25 minutes until set and golden brown.
- Let cool briefly before slicing into wedges.
