Ingredients
- 1/4 cup unsalted butter (softened)
- 3 cloves garlic (minced)
- 3 sprigs rosemary (minced)
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 fryer chicken (cut into pieces)
- 1/2 cup balsamic vinegar
- 1/2 cup fig preserves
Instructions
- Preheat oven to 425 °F (218 °C).
- In a bowl, combine softened butter, half of the minced garlic and rosemary, salt, and pepper. Rub this mixture over the chicken pieces placed in a cast iron skillet.
- Roast in the oven for about 10 minutes.
- Meanwhile, whisk together balsamic vinegar, fig preserves, remaining garlic and rosemary, salt, and pepper.
- After 10 minutes, brush most of the sauce over the chicken and return it to the oven. Baste every 10 minutes until cooked through (165 °F internal temperature).
- Serve warm with extra glaze poured on top.
