Ingredients

  • 1012 baguette slices (about ½” thick)
  • 6 tbsp olive oil, divided
  • 1 teaspoon garlic powder
  • 1 avocado
  • Juice of ½ lime
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 12 large shrimp, peeled and deveined
  • 2 big garlic cloves, cut into slivers
  • ¾ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Slice baguette into 10-12 pieces (½ inch thick) and arrange on the baking sheet.
  3. In a bowl, mix 3 tablespoons olive oil with garlic powder; brush onto both sides of the baguette slices.
  4. Bake for 10-15 minutes until golden brown and crispy.
  5. Mash avocado in a bowl; add lime juice, salt, and pepper; mix well.
  6. In a skillet, heat remaining olive oil over low heat; add garlic slivers and cook until fragrant.
  7. Increase heat to medium-high; add shrimp along with smoked paprika, cumin, salt, and pepper; cook until shrimp are pink (about 3-5 minutes).
  8. Spread avocado mixture on each crostini and top with shrimp; serve immediately.
