- 2 medium zucchinis, diced

Instructions
- Gather all ingredients: Chop onion, mince garlic, and dice zucchinis.
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic for about 2-3 minutes until translucent.
- Add ground beef to the skillet; break apart while cooking until browned (about 5-7 minutes). Drain any excess fat.
- Stir in diced zucchinis along with oregano, cumin, salt, and pepper; cook for an additional 5-7 minutes until zucchinis are tender.
- Mix in drained diced tomatoes; let simmer for another 5 minutes to meld flavors.
- Serve over a bed of cooked rice and garnish with fresh parsley and feta cheese if desired.
