Ingredients
- 1.5 lb salmon fillet (skin on)
- Zest and juice from 1 large orange
- ½ tbsp olive oil
- 1 tbsp brown sugar
- 1 tsp chipotle chili powder
- ½ tsp cumin
- Kosher salt
- Freshly ground black pepper
- Thin slices of another large orange
Instructions
- Soak the cedar plank in beer and water for at least 4 hours.
- In a small bowl, combine orange zest, juice, olive oil, brown sugar, chipotle powder, and cumin.
- Place the soaked plank on a grill; preheat to medium-high heat (415°F).
- Pat the salmon dry and place it skin-side down on the plank. Rub with marinade and season with salt and pepper; top with orange slices.
- Grill for 25-30 minutes until the salmon flakes easily.
