  • Olive oil spray
  • Juice of 1 small lime

  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the grill to medium heat.
  2. In a mixing bowl, combine diced avocados, diced peach, minced jalapeno, half of the lime juice, cilantro, and salt; mix gently.
  3. Season mahi mahi fillets with olive oil spray and a blend of paprika, chili powder, cumin, thyme, garlic powder, and salt.
  4. Grill fillets for about 4 minutes on each side until flaky.
  5. Grill additional avocado and peach slices for 2–3 minutes until charred.
