Ingredients
- 4 (6 oz.) mahi mahi fillets
- 1.5 California avocados
- 1 large peach (slightly underripe)
- Olive oil spray
- Juice of 1 small lime
- 1 tablespoon minced jalapeno pepper
- 2 teaspoons paprika
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 3/4 teaspoon kosher salt
- 1/2 teaspoon garlic powder
Instructions
- Preheat the grill to medium heat.
- In a mixing bowl, combine diced avocados, diced peach, minced jalapeno, half of the lime juice, cilantro, and salt; mix gently.
- Season mahi mahi fillets with olive oil spray and a blend of paprika, chili powder, cumin, thyme, garlic powder, and salt.
- Grill fillets for about 4 minutes on each side until flaky.
- Grill additional avocado and peach slices for 2–3 minutes until charred.
- Serve mahi mahi topped with salsa and grilled slices.
