- ½ fresh pineapple
- 1 medium red bell pepper
- ½ medium red onion
- ½ bunch cilantro
- 1 serrano pepper
- ½ cup extra-virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, cumin, salt, and pepper to create a marinade.
- Coat mahi mahi fillets in the marinade and let them sit for at least 15 minutes.
- Preheat your grill to medium-high heat and grill pineapple slices for about 3-4 minutes per side.
- Grill marinated mahi mahi for 5-6 minutes per side until cooked through.
- Combine grilled pineapple with diced peppers, onions, cilantro, serrano pepper, vinegar, salt, and pepper in a bowl for salsa.
- Serve grilled mahi mahi topped with pineapple salsa.
