  • ½ cup extra-virgin olive oil
  • ⅔ cup chopped cilantro leaves
  • Zest of 1 large orange
  • Juice from 2 large oranges
  • Juice from 4 limes
  • 3 tablespoons chopped fresh mint leaves
  • 6 cloves minced garlic
  • 1 teaspoon dried oregano
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon Kosher salt
  • 1 teaspoon fresh ground black pepper
  • 2 (1-pound) beef tenderloins

Instructions

  1. In a mixing bowl, whisk together olive oil, cilantro, orange zest and juice, lime juice, mint leaves, garlic, oregano, cumin, salt, and pepper.
  2. Place beef tenderloins in a resealable bag or dish and pour marinade over them. Seal/cover and refrigerate overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove beef from marinade and shake off excess. Grill for about 15-20 minutes per side until reaching an internal temperature of at least 135°F for medium-rare.
  5. Allow the tenderloin to rest for 10 minutes before slicing.
