Ingredients
- ½ cup extra-virgin olive oil
- ⅔ cup chopped cilantro leaves
- Zest of 1 large orange
- Juice from 2 large oranges
- Juice from 4 limes
- 3 tablespoons chopped fresh mint leaves
- 6 cloves minced garlic
- 1 teaspoon dried oregano
- 1 ½ teaspoons ground cumin
- 1 teaspoon Kosher salt
- 1 teaspoon fresh ground black pepper
- 2 (1-pound) beef tenderloins
Instructions
- In a mixing bowl, whisk together olive oil, cilantro, orange zest and juice, lime juice, mint leaves, garlic, oregano, cumin, salt, and pepper.
- Place beef tenderloins in a resealable bag or dish and pour marinade over them. Seal/cover and refrigerate overnight.
- Preheat the grill to medium-high heat.
- Remove beef from marinade and shake off excess. Grill for about 15-20 minutes per side until reaching an internal temperature of at least 135°F for medium-rare.
- Allow the tenderloin to rest for 10 minutes before slicing.
