Instructions
- Preheat the grill to medium-high heat.
- Slice zucchini lengthwise into ¼-inch strips and trim the ends.
- Brush both sides of each strip with olive oil, then sprinkle with salt and pepper.
- Grill zucchini strips for 2-3 minutes on each side until tender but firm.
- Spread hummus on each grilled strip and add pieces of roasted red bell pepper.
- Roll up each zucchini slice and arrange on a platter to serve.
