Ingredients
- 2 large egg whites (room temperature)
- 1/4 tsp cream of tartar
- 1/2 cup white sugar
- 1 stick unsalted butter (softened)
- 2 cups confectioner’s sugar
- 2 tbsp milk
- Purple gel food coloring
- Black decorating frosting
Instructions
- Preheat the oven to 200°F and line a baking sheet with parchment paper.
- In a large bowl, beat egg whites on low speed, adding cream of tartar until soft peaks form. Gradually add sugar while increasing speed until stiff peaks form.
- Pipe meringue ghosts on the baking sheet and bake for 2 hours; turn off the oven and leave them inside for another 30 minutes.
- For buttercream, combine softened butter, confectioners’ sugar, and milk in a bowl. Beat until smooth, then tint with purple food coloring.
- Frost each cupcake with purple buttercream and top with meringue ghosts decorated using black frosting for eyes and mouths.
