  • 1/4 tsp cream of tartar
  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner’s sugar
  • 2 tbsp milk
  • Purple gel food coloring
  • Black decorating frosting

Instructions

  1. Preheat the oven to 200°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat egg whites on low speed, adding cream of tartar until soft peaks form. Gradually add sugar while increasing speed until stiff peaks form.
  3. Pipe meringue ghosts on the baking sheet and bake for 2 hours; turn off the oven and leave them inside for another 30 minutes.
  4. For buttercream, combine softened butter, confectioners’ sugar, and milk in a bowl. Beat until smooth, then tint with purple food coloring.
  5. Frost each cupcake with purple buttercream and top with meringue ghosts decorated using black frosting for eyes and mouths.
