- 1 1/2 cups mashed ripe banana
- 1 1/4 cups granulated sugar
- 1 can (8 oz) crushed pineapple, undrained
- 1/2 cup buttermilk
- 1/2 cup melted butter (cooled)

- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp salt
- 1/2 cup flaked coconut
Instructions
- Preheat your oven to 350°F (175°C) and grease your bread pan.
- In a large bowl, mix mashed bananas, sugar, crushed pineapple (with juice), buttermilk, melted butter, eggs, and vanilla until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, and flaked coconut.
- Make a well in the dry ingredients and pour in the wet mixture. Stir gently until just combined; avoid overmixing.
- Pour the batter into the prepared bread pan and bake for 50 minutes to 1 hour or until a toothpick inserted comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
