- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1/2 cup bell peppers, diced
- 1 lb boneless skinless chicken breasts
- 6 cups reduced-sodium chicken broth
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 2 tbsp lemon juice
Instructions
- Heat olive oil in a Dutch oven over medium-high heat.
- Sauté onion, garlic, and ginger until fragrant.
- Add bell peppers and seasonings; cook for an additional 3 minutes.
- Stir in chicken breasts and broth; bring to a simmer for about 20 minutes.
- Shred the chicken before returning it to the pot.
- Add broccoli and cauliflower; simmer until tender.
- Stir in lemon juice before serving.
