  • 1 pound white fish (haddock, cod, or halibut)
  • 1 pound shrimp
  • 1 pound scallops (optional)
  • 1 pound mussels (discard any that don’t open)
  • 2 medium potatoes (cubed)
  • 2 cloves garlic (minced)
  • 1 medium onion (diced)
  • 4 cups seafood stock (or chicken stock)
  • Fresh herbs (thyme and bay leaf)

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables. Dice the onion and garlic, peel and cube the potatoes.
  2. In a large pot over medium heat, sauté the onion until translucent, then add minced garlic until fragrant.
  3. Add cubed potatoes and pour in the seafood stock along with white apple vinegar if using. Bring to a boil, then simmer until potatoes are tender.
  4. Stir in the white fish pieces followed by shrimp, scallops, and mussels. Simmer until all seafood is cooked through.
  5. Lower the heat and stir in heavy cream and whole milk along with fresh herbs. Heat through without boiling.
