Ingredients
- 1 cup heavy cream
- 1 cup whole milk
- 1 pound white fish (haddock, cod, or halibut)
- 1 pound shrimp
- 1 pound scallops (optional)
- 1 pound mussels (discard any that don’t open)
- 2 medium potatoes (cubed)
- 2 cloves garlic (minced)
- 1 medium onion (diced)
- 4 cups seafood stock (or chicken stock)
- Fresh herbs (thyme and bay leaf)
Instructions
- Prepare your ingredients by washing and chopping the vegetables. Dice the onion and garlic, peel and cube the potatoes.
- In a large pot over medium heat, sauté the onion until translucent, then add minced garlic until fragrant.
- Add cubed potatoes and pour in the seafood stock along with white apple vinegar if using. Bring to a boil, then simmer until potatoes are tender.
- Stir in the white fish pieces followed by shrimp, scallops, and mussels. Simmer until all seafood is cooked through.
- Lower the heat and stir in heavy cream and whole milk along with fresh herbs. Heat through without boiling.
