Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together softened unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in one egg and vanilla extract until well combined.
- In another bowl, whisk together all-purpose flour, baking soda, and salt; gradually add to the wet mixture to form dough.
- Shape the dough into small ovals, press with a fork for the classic pattern, and sprinkle with sugar.
- Bake for 8–10 minutes until lightly golden, then cool completely.
- For the filling, beat together additional creamy peanut butter, softened unsalted butter, powdered sugar, and vanilla extract; adjust consistency with milk as needed.
- Assemble by spreading the filling between cooled cookies.
