Ingredients
- 1/3 cup water
- 3/4 cup granulated sugar
- 3/4 cup light corn syrup
- 3 large egg whites (room temperature)
- 1/2 teaspoon cream of tartar
- 1 teaspoon vanilla extract
Instructions
- In a medium heavy-bottom saucepan, combine water, sugar, and corn syrup. Heat over medium-high until the mixture reaches 240°F without stirring.
- In a stand mixer or mixing bowl with an electric hand mixer, whip egg whites and cream of tartar on medium speed until soft peaks form (about 3-4 minutes).
- Slowly pour the hot sugar mixture into the whipped egg whites while mixing on medium speed.
- Increase the speed to medium-high and whip for an additional 7-8 minutes until fluffy. Add vanilla extract and mix well.
- Allow to cool completely before using or storing in an airtight container.
