Ingredients
- 4 tablespoons olive oil
- 2½ pounds stewing beef (cut into 1-inch pieces)
- 2 large onions (roughly chopped)
- 5 cloves garlic (minced)
- 3 tablespoons sweet paprika
- 4 cups beef broth (no salt added)
- ½ cup tomato sauce
- 2 tablespoons balsamic vinegar
- Fresh parsley (for garnish)
Instructions
- Heat olive oil in a Dutch oven over high heat. Sear the beef until browned on all sides; set aside.
- In the same pot, reduce heat to medium-high and cook onions and garlic until softened.
- Add sweet paprika, caraway seeds, oregano, bay leaves, and brown sugar; cook briefly until fragrant.
- Stir in tomato sauce, balsamic vinegar, and beef broth. Return seared beef to the pot.
- Bring to a boil then reduce heat to low, cover tightly, and simmer for about 2 hours or until beef is tender.
- Adjust seasoning if needed and serve garnished with fresh parsley.
