- 1 cup crushed pineapple (well-drained)
- 1/2 cup unsalted butter (softened)
- 1 cup white sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 and 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, followed by vanilla extract.
- Gently fold in the sour cream, then gradually add the dry ingredients until just combined.
- Fold in the drained crushed pineapple until evenly distributed.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- While cooling, prepare the glaze by whisking powdered sugar with pineapple juice until smooth.
- Once cooled, drizzle the glaze over the cake and serve.
