- 1 pound Turkey Bacon
- 8 ounces cream cheese
- ½ cup grated Parmesan cheese
- 1 ½ cups sharp cheddar cheese, shredded
- 1/3 cup avocado mayonnaise
- 1 cup heavy cream
- ½ teaspoon hot sauce
- 1 teaspoon dry mustard
- ½ teaspoon white pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- 1 store-bought cooked rotisserie chicken, chopped
- 1 ½ cups red onion, diced
- 8 ounces baby bella mushrooms, sliced
- 1 tablespoon fresh garlic, minced
- 8 ounces baby spinach
- 2 cups mozzarella cheese, shredded
Instructions
- 1. Preheat the oven to 375°F.
- 2. In a large skillet, cook Turkey Bacon until crispy. Remove and reserve fat.
- 3. In a medium saucepan over medium heat, combine cream cheese, Parmesan, cheddar, mayonnaise, heavy cream, hot sauce, dry mustard, white pepper, garlic powder, onion powder, and paprika until creamy.
- 4. Chop the cooked turkey bacon and mix it into the cream mixture.
- 5. Sauté onions and mushrooms in reserved turkey bacon fat until soft; add garlic and spinach until wilted.
- 6. Combine sautéed vegetables with the cream mixture and chopped rotisserie chicken; transfer to an 8×12 inch casserole dish.
- 7. Top with mozzarella cheese and bake for 20 minutes. Broil for an additional 1–2 minutes until golden brown.
- 8. Let rest for 10 minutes before serving.
